Savoring the Seasons: Surf and turf

I planned to write about garlic scapes after I drove several miles behind a SLOW tractor pulling a trailer with bins of those tasty green curlicues that appear on garlic plants this time of year. Here’s the short version of what I pondered on that slow drive:
Garlic scapes! Make pesto! Chop and saute them, include them to add garlicky flavor to any dish! Enjoy!
I’d have said more about garlic scapes, but I got an email reminder to sign up for the next Cape Cod Fish Share. Then, I went to the Greenfield Farmers Market and saw signs for Bostrom Farm’s Meat CSA and Gray Dog’s Farm’s chicken and woods-wandering pork and Sunrise Farm’s grass-fed beef. Talking with Natty at the Bostrom Farm booth, I mentioned the possibility of writing about meat and fish and he said, “Surf and Turf!”
Yes, right in downtown Greenfield, you can get locally, humanely, and sustainably raised beef, pork and chicken and fresh-from-the-boat fish from Cape Cod.
Cape Cod Fish Share sells Community Supported Fishery (CSF) shares, just like many farms in this area sell Community Supported Agriculture (CSA) shares. Shareholders sign up for a 3- or 5-week share and each week pick up fresh fish at the Greenfield Farmers Market. I like knowing the fish I’m eating supports “local” fishing families and that their fishing techniques don’t hurt the ocean environment. I am four weeks into a five-week share of fish and it has been a tasty combination of familiar fish and fish I’ve never eaten, including swordfish, calamari, hake, skate, bluefin tuna, cod and redfish.
I’m very familiar with Bostrom Farm’s meat, including their special hot dogs and great bacon. Last week, I made a favorite meal from my childhood, Joe’s Special, with Bostrom Farm ground beef (see recipe below).
The meat CSF/fish CSF share options are a great value and help support local and regional food producers. If you’re not ready to sign up for a share, you can buy individual cuts of meat at Bostrom Farm’s, Gray Dog’s Farm’s and Sunrise Farm’s booths at the farmers market. Sometimes, the Cape Cod Fish Share booth has individual pieces of fish for sale, but often they sell out of retail and just have fish for shareholders.
Bostrom Farm Summer Meat CSA. Grass-fed beef and pork CSA from July to October. A share = 40 pounds of portion-sized cuts of beef and pork, 10 lb. per month. Pick up on the first Saturday of each month at Greenfield Farmers Market. Cuts include ground beef, stew beef, beef steaks, soup bones, hot dogs, ground pork, pork chops, ham, ribs, hock, and smoked bacon. The mixture will be spread out over the four months. Cost: $300. Saute chopped onion in oil in cast iron frying pan until translucent. Add ground beef (or ground turkey). Cook meat until browned, breaking up with a spoon. Drain off any excess fat. Add chopped fresh spinach and cook for a minute or so until limp. Add 3 large, lightly beaten eggs. Stir and cook until eggs are set. Sprinkle with grated Parmesan cheese and serve.
