GREENFIELD — A national media and marketing company that promotes local, independently owned restaurants recently posted to YouTube an episode that was filmed at Mesa Verde.
“America’s Best Restaurants” visited the Mexican eatery on June 18 and host Theo Williams sampled some signature dishes whipped up by owner Amy McMahan. The resulting episode, “Everything is Stuffed in This Burrito | Mesa Verde,” spans 10 minutes and 22 seconds and can be viewed at tinyurl.com/MesaVerdeShow.
“I love that they focused on the community aspect of Mesa,” McMahan told the Greenfield Recorder in an email. “As we celebrate 22 years of being in business, we continue to think about how best to serve this community.”
She was filmed cooking the space cowboy burrito (barbecued shredded beef brisket, bacon, onion rings, jalapeno poppers, Monterey Jack and cheddar cheeses, pico de gallo, and black beans and rice), as well as the cilantro, avocado and lime bowl with blackened chicken, and the blackened catfish tacos.
During the episode’s interview portion, McMahan mentioned she is an ordained reverend who thinks of food as an incredibly powerful connector of people. She explained her mother was Vietnamese and used food to describe where she was from.
