It sounds like the only missing piece is a local (Pioneer Valley) grist mill! If this takes off there will certainly be an opening for such a business. Thank you so much for covering this story - developing and creating a vibrant local economy is our best survial defense!
This is where the future lies, not with massive agrobusiness far away, trucking goods thousands of miles, but locally based, regionally self-sufficient growers.
The Pioneer Valley has great wealth in its local agriculture. And naming this new venture after Daniel Shays is symbolic gold. Up with our local heritage, down with distant, profit-greedy corporations!
This would really be great if the valley came full circle back to its roots - With transportation costs even low quality food is expensive - A high quality local food source that does not have to be transported - sounds like a winner. Go with your core compentency Pioneer Valley.

I love this idea. It's great. I have been trying to find some wheat berry seeds for some time now. What we would like to do with it, is to have residents in nursing homes grow it and make bread from it. It's a good way for them to use all of thier sences. But after throwing the idea to them, I can't seem to find any except in very large quanitys. By any chance do you have any seeds you would like to donate to our nursing home?
