Letter: Food for thought

Another small step for the corporations, another giant step to climate change. I just read that the Department of Agriculture now permits slaughtered U.S. and Canadian chickens to be processed in China and then exported back to the states.

Here are the issues:

∎ Taking away U.S. jobs.

∎ Transportation that pollutes.

∎ Food Safety — will U.S. inspectors go to China to see the handling and “food” that is added to the chickens?

Besides being a health problem, this is another reason to not eat processed foods: Yay for the people who raise chickens locally.
